Why “YOU” need Fully Loaded Cauliflower in your life!

Okay Guys I think I have created a master piece. 


My tastebuds are singing right now and my tummy is full. 


You won’t be disappointed in making this one.


Okay so I saw a recipe for fully loaded potatoes casserole and well being low carb/keto, potatoes are definitely not on my approved list of foods. Way too much starch and carbs. When eating potatoes if feel very sluggish and tried. 


Last night I dreamed up how I was going to make this amazing dish low carb. I seem to dream out food a lot. 


I have tried doing cauliflower mash but do find that it is runnier than potatoes. Still yummy just not quite the same. 


I took cauliflower broke it up into small pieces and placed in a small glass baking dish I then drizzled avocado oil over it and sprinkled with some “For the LOVE of Garlic Seasoning” from Do You Bake grab yours here.


Bake in oven at 375 for about 20 minutes mixing as it bakes. 


Cook up some bacon, you can use turkey bacon as well, then cut up into small pieces.


Shred up some old sharp cheddar cheese. 


Once the cauliflower is just about cooked to your likeness take out place half of the shredded cheese on top.



then put your bacon, put a couple of dollops of sour cream and top with the remainder of the cheese. Top with a little chives. 


Place back in the oven and bake for another 10 minutes. 


So for me I only eat twice a day so these are my measurements. 


186 grams of cauliflower small pieces

2 Tbsp of Avocado oil/Olive Oil

50 grams Old Cheddar Cheese

2 Tbsp of Sour Cream

6 Slices of Cooked Bacon


32.4 grams of Protien, 7.7 grams of Net Carbs, 63.9 grams Fat

OMG! The Best KETO CUCUMBER SALAD Ever!

Now that summer is here, there is lots of backyard bbq’s, pool party’s maybe even a family reunion and that means potlucks galore. 


You know there is going to be all sorts of salads and treats filled with sugar and all those extra carbs. You need to know there will be one salad that you can eat. 


This will be the one for sure. 


Okay I have had some okay and some absolutely horrible cucumber salads in my days. Most of the time they are so full of sugar and are so sweet that only a few mouthfuls and I am done. Yes you read that right a cucumber salad with sugar. 


A friend of mine from the keto community shared a recipe she made the other night and well I had to revamp to add my own spin on it. 


1 small sized sweet onion sliced very thin

5-6 small cucumbers or 2 large cut lengthway then sliced in ⅛” 

Place in a bowl


Sauce mix in a small bowl or measuring cup 


¼ cup full fat Greek Yogurt (in Alberta we have this stuff call Kerma so amazing extremely thick). 

1 ½ teaspoon of garlic powder or fresh garlic 

1 tablespoon balsamic vinegar

1 teaspoon lemon juice

3 drops Young Living Lemon Plus (vitality) essential oil for an extra punch (contact me to purchase)

1 teaspoon of sweetener (I used Lakanto) get here https://amzn.to/3hGAY5b

2 sprigs of fresh dill chopped nice and small


Now add your sauce into the cucumber and onion mixture and place in the fridge to chill for 1-2 hours. 


While this is chilling 


Chop up one package of bacon. 

Fry it up until just about crispy. 



Place it on paper towel and place in fridge to cool. 


When time to eat place the salad in a bowl and add some crumbled bacon to the top. Mix in and enjoy. 


This was our dinner tonight and it hit the spot on a hot evening. It hit the spot and was perfect. We had it just like this but pairing it with a bbq burger or chicken would have made this all the more complete.

Old School Thinking in a Modern World.

Growing up we were always told if you work hard you will succeed. We were both working full time working hard. We saved enough for a down payment for our first home. We were just 23, thrilled that we were now homeowners. I am sure you can imagine the excitement we felt.



Never did we imagine that by purchasing a condo our lives were going to be turned upside down.



Thinking we were being smart we bought a new condo with a homeowners warranty. About 8 months into this we started smelling mold in the living room. Others in our building were noticing the same thing. After some complaining to the property managers there was testing done on the condo and discovered that it was leaking. The roof and walls were mushy and full of mold. We purchased for $125k and slapped with first a $5k bill and then a $32k bill. Oh my gosh we were heartbroken. Overnight our condo dropped in price to $50k. We were still responsible for the mortgage plus now the special assessment.



With being pregnant with our first child we sought out legal advice. Of the three people we spoke to they all advised walking away, we would never recover the money from it. With the New Homeowners warranty going bankrupt leaving us with no protection, to the government who failed to protect us leaving us with no other choice but to walk away. 



Just after the birth of our son we declared bankruptcy. Yep that word scared the life out of us. This would stay on our credit for 7 years. Oh those were the longest of years. I didn’t think it would ever end. 



The financial troubles all began in 1998 when we signed those papers for bankruptcy. Don’t get me wrong we knew this was going to be rough but, we also thought we would bounce back quickly. After all we both had decent paying jobs.



We spent many years struggling from this point on. Never thinking we would get ahead. Our dreams of traveling seemed so far away. There was just something about traveling that we both longed for. 



Talking a leap 7 years ago into a better lifestyle has allowed us the opportunity to travel multiple times a year. We are no longer living pay cheque to pay cheque.

Just over a year ago Jayson and I decided to go low carb and give up sugar.  Not going to kid anyone it sure is hard.  We still do enjoy having treats.  

We make a Peanut Butter Chocolate Ball.  Just one for me does the trick.  

1 cup - Natural Peanut Butter (any nut butter will work just unsweetene)
1 package Lily’s chocolate chips
1 1/4 cup toasted unsweetened coconut
8 oz of whipping cream (heavy cream)
1tsp vanilla 

Put nut butter into class bowl with chocolate chips and melt for 30 second at a time.  
Once it is all melted and combined add in the toasted coconut stir well. 
Add in the vanilla and whipping cream and stir.  

I use a small cookie scoop to scoop them out.  Put in the freezer for 30 minutes or 1 hour in the fridge to set.  

Store in an airtight container in either the fridge or freezer.

Stress, Anxiety and Panic Attack’s can be CALMED!

For years I struggled with depression, anxiety which would turn into panic attacks. This started after the birth of my second child and went on for many years.  I met a wonderful lady Jodie who taught me about affirmations.  


By saying positive affirmations, you can disrupt the negative thought patterns that are feeding the anxiety. 


Step 1 - print out and laminate the affirmations

Step 2 - say the affirmations every day try for twice a day.

Step 3 - say the affirmations in front of a mirror (this is a hard one) It did take some        time to be able to do it but I did it. 


Affirmations 

  1. I (insert your name) can do all things through Christ who strengthens me. (This is. My all time favourite one)

  2. I (insert your name) am capable of solving any problems that face me

  3. I (insert your name) am riding MY mind of negative thoughts

  4. I (insert your name) am filling MY mind with positive thoughts

  5. I (insert your name) AM safe and in control

  6. I (insert your name) will not let anxiety take control of my mind

  7. I (insert your name) have the ability to overcome anxiety and fear

  8. I (insert your name) am CALM

  9. I (insert your name) have a CALM body

  10. I (insert your name) will not allow panic to set it

  11. I (insert your name) am FREE from stress

  12. I (insert your name) love MYSELF

  13. I (insert your name) breathing slowly and deeply, filling myself with calmness

  14. I (insert your name) am slowing my mind

  15. I (insert your name) deserve a peaceful and loving life

  16. I (insert your name) let go of defensiveness and choose to fill my world with joy and kindness instead.

  17. I (insert your name) am thankful and grateful for the good in my life.

  18. Calmness washes over me with every deep breath I take.


When I am doing my affirmations or when I am starting to feel anxious… 


Step 1 place one or two drops of the oil in my left hand.

Step 2 put right hand over left hand and run the oil in a clockwise motion

Step 3 Place your ring finger and middle finger starting with the right hand. 

Step 4 with your left hand block your left nostril. Breath in through the right nostril and 

    Out through the left.

Step 5 Switch hands and breath in through the left nostril and out with the right.  

Step 6 repeat this 5 times.  


After doing thisI feel extremely calm and relaxed.  Some days are tougher than others and I will have to do this a few time during the day.
