A bit about us…..

We met in 1993 and were married in 1995. 

Yep, we have been together for what seems like forever. 

Soon after having our second child Tina’s job shut down, we went from having two decent incomes down to one. Unable to find another job paying much more than minimum wage, the bills were piling up. Our marriage was on the rocks, having financial troubles will do that. Always a few months behind on the bills. 

With what life was throwing at us we struggled with depression which led to being overweight. We tried all sorts of fad diets to get rich quick schemes.

We moved around chasing dreams of a better life only to be disappointed once again. 

We took a leap of faith. We sold most of our belongings, loaded our minivan with two kids and a dog, hauling a trailer we set off from British Columbia to Alberta with $2000 in the bank. We didn’t have a home or jobs but we knew there had to be something better. Within a couple of days, we both had landed good jobs.  And both making a decent wage. 

After a few years of this, we were still dreaming, but not achieving what we wanted. Jayson was working away for weeks at a time.  Tina was at a breaking point, not sleeping and stressed out, a friend made a post about changes she was making.  At this point we thought, we have nothing to lose and jumped on board.  

Eight years later we are living a chemical-free lifestyle with migraines and asthma under control. 

By jumping into this adventure and yes we call it an adventure. We are learning how to live a better life and having way more fun. Allowing us to put money aside for retirement but to still travel the world.

We have now entered a new chapter of our lives as empty nesters. We have found a way to reconnect as a husband and wife through travel. 

Our dreams are our reality. We spend 6 to 12 weeks a year travelling (traveling) and discovering new places. 

We are “living Life” and loving it as the Traveling Empty Nesters.

With Tina being a travel consultant and coach we are now on a mission to help other empty nesters find themselves through travel.

Why “YOU” need Fully Loaded Cauliflower in your life!

Okay Guys I think I have created a master piece. 


My tastebuds are singing right now and my tummy is full. 


You won’t be disappointed in making this one.


Okay so I saw a recipe for fully loaded potatoes casserole and well being low carb/keto, potatoes are definitely not on my approved list of foods. Way too much starch and carbs. When eating potatoes if feel very sluggish and tried. 


Last night I dreamed up how I was going to make this amazing dish low carb. I seem to dream out food a lot. 


I have tried doing cauliflower mash but do find that it is runnier than potatoes. Still yummy just not quite the same. 


I took cauliflower broke it up into small pieces and placed in a small glass baking dish I then drizzled avocado oil over it and sprinkled with some “For the LOVE of Garlic Seasoning” from Do You Bake grab yours here.


Bake in oven at 375 for about 20 minutes mixing as it bakes. 


Cook up some bacon, you can use turkey bacon as well, then cut up into small pieces.


Shred up some old sharp cheddar cheese. 


Once the cauliflower is just about cooked to your likeness take out place half of the shredded cheese on top.



then put your bacon, put a couple of dollops of sour cream and top with the remainder of the cheese. Top with a little chives. 


Place back in the oven and bake for another 10 minutes. 


So for me I only eat twice a day so these are my measurements. 


186 grams of cauliflower small pieces

2 Tbsp of Avocado oil/Olive Oil

50 grams Old Cheddar Cheese

2 Tbsp of Sour Cream

6 Slices of Cooked Bacon


32.4 grams of Protien, 7.7 grams of Net Carbs, 63.9 grams Fat

OMG! The Best KETO CUCUMBER SALAD Ever!

Now that summer is here, there is lots of backyard bbq’s, pool party’s maybe even a family reunion and that means potlucks galore. 


You know there is going to be all sorts of salads and treats filled with sugar and all those extra carbs. You need to know there will be one salad that you can eat. 


This will be the one for sure. 


Okay I have had some okay and some absolutely horrible cucumber salads in my days. Most of the time they are so full of sugar and are so sweet that only a few mouthfuls and I am done. Yes you read that right a cucumber salad with sugar. 


A friend of mine from the keto community shared a recipe she made the other night and well I had to revamp to add my own spin on it. 


1 small sized sweet onion sliced very thin

5-6 small cucumbers or 2 large cut lengthway then sliced in ⅛” 

Place in a bowl


Sauce mix in a small bowl or measuring cup 


¼ cup full fat Greek Yogurt (in Alberta we have this stuff call Kerma so amazing extremely thick). 

1 ½ teaspoon of garlic powder or fresh garlic 

1 tablespoon balsamic vinegar

1 teaspoon lemon juice

3 drops Young Living Lemon Plus (vitality) essential oil for an extra punch (contact me to purchase)

1 teaspoon of sweetener (I used Lakanto) get here https://amzn.to/3hGAY5b

2 sprigs of fresh dill chopped nice and small


Now add your sauce into the cucumber and onion mixture and place in the fridge to chill for 1-2 hours. 


While this is chilling 


Chop up one package of bacon. 

Fry it up until just about crispy. 



Place it on paper towel and place in fridge to cool. 


When time to eat place the salad in a bowl and add some crumbled bacon to the top. Mix in and enjoy. 


This was our dinner tonight and it hit the spot on a hot evening. It hit the spot and was perfect. We had it just like this but pairing it with a bbq burger or chicken would have made this all the more complete.
